Most white rolling papers get their colour from chlorine bleaching. That process leaves trace chemical residues in the paper. You might not taste them in a single smoke, but over weeks and months, those extras add up to a harsher, less pleasant experience. Unbleached papers skip that step entirely. The natural brown colour you see is the colour of the raw plant fibre — nothing added, nothing stripped away.
