If you've done Mexicana a couple of times and want to step up, Pajaritos is the natural next move — a touch more visual depth without a huge jump in intensity. Skip straight to Hollandia or Valhalla and you're in a completely different category. Work your way up.
Mexicana truffles arrive vacuum-sealed and should go straight into the fridge at 2–4 °C. Unopened, they'll keep for several weeks — check the best-before date on the pack. Once you break the seal, use them within 48 hours. The vacuum packaging keeps contamination out and freshness in, but once air gets to them, they start to degrade.
Don't freeze them. Freezing damages the cell structure of the sclerotia and can make the texture unpleasantly mushy when thawed. The fridge is all you need.
